Just following up. Ordered the Dell USB-C to HDMI adapter which Dell says will fix this issue for Mac M1 but it did not fix the issue. I've discovered that changing my display profile to sRGB completely fixes the issue. No idea why but it does. Colors are slightly lighter it seems but after about 20 minutes of using it I don't even notice.
